Rice Cheese Balls
Ingredients:
- 2 eggs, beaten
- 1 cup cooked rice
- 1/2 cup mozzarella cheese (or Quickmelt Cheese)
- 3/4 cup bread crumbs
- 1/2 cup all-purpose flour
- salt & pepper
- water
- 3 tbsp cooking oil
Instructions:
- In a bowl, mix the cooked rice, mozzarella cheese, salt and pepper
- Make sure the mixture is sticky enough
- Mold the mixture into small balls using an ice cream scoop (or a spoon, or something that can help you mold the balls easier)
- Put it in your hand and roll it into small balls
- Dredge it in all-purpose flour
- Put them one-by-one into the beaten eggs
- Then roll them in the bread crumbs
- Fry them in a hot oil
- Serve with mayonnaise and ketchup
Best for snacks or dinner :)
